Roasted Hidden Vegetable Pastina Soup, vegetable or chicken adaptable

This recipe is modified from its original version to suit our family. This is an easily customizable soup with lots of healthy yum. To make it vegetable, omit chicken and Boullion. To make it beef, substitute beef in place of chicken. Pastina is small pasta. You can use Alphabet, Stars, mini shells, or just break up spaghetti noodles into tiny pieces.

Instructions

Step 1
Wash and chop vegetables. Spread carrots, celery, onion, and garlic out on a rimmed baking sheet sprayed with non-stick spray. Drizzle with oil.
Step 2
Bake at 350 for at least 35 minutes, or until crisp-tender. Stir at least one time during roasting.
Step 3
If using meat roast this in the oven or prepare according to your preferred method until cooked through. (Bnls chicken thighs cook in about 20-25 minutes and can be added to the vegetable tray or on a separate tray).
Step 4
Boil pasta al-dente according to package, drain when done. If it is sticking together you can stir in a little oil to prevent sticking.
Step 5
Add a little oil to the bottom of your blender, add water and Boullion. Add roasted vegetables to blender.
Step 6
If your family wants chicken chunks, then only add about one half-thigh to the blender for nutrition/flavor. Cut the remaining chicken up into bite-size pieces and add to a medium stock pot. If your family doesn't want chunks then cut the chicken into large chunks and add all to the blender.
Step 7
Blend everything on medium speed until all chunks are incorporated into a smooth broth.
Step 8
Combine broth, bay leaves, and pasta and heat until desired temperature. Remove bay leaves and discard before eating.
