Instructions
Step 1
Preheat oven to 350. Line muffin tray with muffin cups or spray the tin.
Step 2
In large bowl, whisk cornmeal, flour, baking powder, sugar, salt.
Step 3
In separate bowl, break up eggs with a whisk. Whisk in the honey and then the milk. Add the milk mixture and butter to the dry ingredients. Stir until blended. Do not overmix (okay if there are a few lumps)
Step 4
Spoon the batter into the muffin pan, filling each cup almost full.
Step 5
Bake for 17-20 minutes. Until tops are set and golden.
