Instructions

Step 1
Mix the ghee and phyllo dough and spread a bit more than half on the bottom of a 9 by 13 pan and up the sides. Press down with a cup.
Step 2
Roast the other half in a pan or in the oven to pour on top of the baked cheesecake later on. You can also do this later when it’s about to come out of the oven.
Step 3
Mix all the ingredients for the cheesecake mixture making sure that the cream cheese is beaten at room temperature and then add in the eshta cream and one egg at a time. Then add in all the flavorings.
Step 4
Pour the cheesecake batter on the phyllo dough in the pan and spread out evenly with an off set spatula.
Step 5
Bake for 30 mins at 350 degrees.
Step 6
Take it out and immediately spread the other half of the roasted phyllo dough on top and pour the sugar syrup all over and especially on the sides so it seeps into the bottom phyllo dough crust.
Step 7
Garnish with pistachios and dried roses. Enjoy warm or at room temperature!

For the Sugar Syrup

Step 8
Bring the water, sugar, essences, saffron, cardamom and couple drops of freshly squeezed lemon juice to a boil on medium high heat. Only mix it to incorporate all the ingredients. When it comes to a boil, stop stirring.
Step 9
After it comes to a boil, turn it to low heat and set a timer for exactly 10 minutes.
Step 10
Then take it off the stove and let it cool. It should be a thick syrup
