Step 1
Season the strip loin generously with salt and pepper on all sides. Get a cast pan on a high heat, add a little oil and sear on all sides until you have a nice crust.

Then place the strip loin in a preheated oven at 180c/350f. To cook to medium allow 20-25 minutes per 500g of meat. Or if you have a meat thermometer, cook until you have an internal temp of 60c/140f.

Meanwhile slice your tomatoes and pickles.
Step 4
Once the beef is cooked, leave to rest for 30 minutes before slicing.
Step 5
For the mozzarella, slice intro strips and get pan of water onto boil. Once it comes up to simmer, turn the heat down and place a mixing bowl on top, making it a bain-marie. Add the mozzarella and keep stirring and moving around until it has melted and become flexible.

Place your crusty roll into the oven to warm up and slice the beef.
Step 7
Butter the roll generously, top with the beef, pickles, tomatoes and mozzarella.
Step 8
It's by no means traditional, but some mustard or horseradish wouldn't go a miss!
