Instructions
Step 1
1. Chop, boil and purée sweet potato
2. Chop and dice onion and spinach
3. Preheat oven to 180 degrees
4. Combine flours, baking powder, spinach, onion and half the feta in a bowl
5. In a seperate bowl combine eggs, yoghurt, corn, sweet potato, butter and parmesan
6. Fold two mixtures together until combined
7. Spoon mixture into a greased muffin tray, crumble over remaining feta and bake in the oven for 25-30 minutes
