Instructions
Step 1
Soak and then cook brown rice.
Step 2
Cut up 2 small zucchini, 1 red bell pepper, 300g pineapple, and 1 garlic clove.
Step 3
Add olive oil to pan.
Step 4
To pan add 1 onion, garlic, 1.5lb chopped chicken, 1 inch fresh ginger, 1 tsp termeric powder, 2 tbsp curry powder, 1/2 tsp salt, pepper, zucchini, red bell pepper. Cook until soft for 10 minutes.
Step 5
Add 1 can of coconut milk. Add pineapple. Add 1 tsp turmeric. Add 1 tsp curry powder. Cayenne to taste. Cook for 10 more minutes.
Step 6
Tastes better after sitting in frige for a night.
Step 7
Top with fresh cilantro to serve.
