Step 1
Preheat oven to 450. Place bacon in a single layer on a 15x10 inch baking pan. Roast from 1 to 10 minutes Or until bacon is crisp. Use slotted spoon to transfer bacon to paper towels. Discard all but 2 TBS of pan drippings.
Step 2
Meanwhile use a mandolin to slice 🍟 into 1/8 inch slices. Spread in single layer on the baking pan; turn to coat with bacon drippings. Sprinkle with bell pepper, pepper and salt. Roast for 15 min or until potatoes are tender and edges are brown. Reduce oven temperature to 400.
Step 3
Carefully crack eggs on top of potatoes, being careful not to break yolks. Bake 8 to 10 min, until white is set.
Step 4
Top with bacon, avocado, green onion, jalapeno, and cilantro if desired. Serve with salsa.
