These are delicious taquitos for those who are sensitive to dairy and gluten! I cook these in the air fryer but you can just as easily bake in the oven! I also use an instant pot to cook my chicken quickly with lots of flavor!

Instructions

Step 1
First, start by tossing your chicken in an instant pot followed by all of the spices and the salsa. Pressure cook on high for 30 minutes. Alternatively, you can boil some water and toss your chicken in there with the spices and bay leaf (omit the salsa for now) and boil until chicken is tender and shreds easily.
Step 2
Once your chicken is done cooking, use the sear function on the instant pot to start reducing some of the excess liquid. While the liquid is reducing you can start shredding your chicken! If you boiled your chicken, you can strain, shred, and add your salsa at this point.
Step 3
Add in all of your pepper jack and cream cheese, mix thoroughly!
Step 4
Wrap about 5 of your tortillas in a damp paper towel and place on a microwave safe plate, microwave for 30 seconds.
Step 5
Preheat your air fryer to about 370 or oven to 375. Add about 1-2 tablespoons of your chicken mixture near one end of the tortilla. Spread in a thin line until about 1 inch from the edges. Roll up tightly and place seam side down on a plate or directly on baking sheet. Repeat this process until your first batch of tortillas is done.
Step 6
When air fryer or oven are preheated, add a spray of oil (alternatively lightly coat using a brush in oil) and cook for about 8 minutes in the air fryer- or 10-12 minutes in the oven. The edges of the taquito should be slightly browned.
Step 7
While the first batch cooks, you can start your 2nd batch. You don’t want to make too many ahead of time because the tortillas can get cold and start splitting. If you’re using a baking sheet you can probably do about 15 at a time, while I would only recommend about 5 for the air fryer.
Step 8
When the taquitos are done- serve with guacamole or salsa! You can also freeze these. I would recommend that you cook the taquitos before freezing so you don’t have a tortilla splitting issue like I mentioned before.
