Step 1
Preheat oven to 200C (fan).
Step 2
Pierce the aubergines with a fork, place them on a baking tray, covered with the parchment and toast for 1 hour.
Step 3
When ready let them cool, remove skin and drain. Add to a food processor together with coriander, chilli pepper, 1tbsp olive oil, salt, pepper, and Boursin cheese. Blend it and transfer it to the serving platter and use a spoon to create a nice swoosh on top. Drizzle with remaining olive oil and enjoy with toasted bread!
