Instructions
Step 1
Boil your noodles according to the instructions on the package and set aside about a 1/4 cup of the starchy water when draining.
Step 2
Wash and cut your broccoli and Mushrooms in evenly sized pieces.
Step 3
Finely chop your onion and spring onion.
Step 4
Toast almonds on a hot and dry pan for a few minutes. Then remove from pan and set aside to use as a topping later.
Step 5
Heat sesame oil in a pan, add onion, and fry at a lower temperature for several minutes.
Step 6
Turn up the heat to medium and add Broccoli to your pan and fry for 5 minutes, stirring occasionally.Finally, add Mushrooms and fry for 5 extra minutes.
Step 7
Lower the heat, add rice vinegar and soy sauce to your pan and mix.
Step 8
Add the reserved starchy water from noodles to the frying pan and bring to a simmer until thickened. Add salt and pepper to taste.
Step 9
Add your cooked noodles to your pan and mix until evenly coated. Serve and enjoy warm.
Step 10
Add Almonds and Spring Onion on top.
