As a North Carolina native, this was a staple dish for a hearty, pre-church breakfast during my childhood. It's just filling enough to get you through until lunchtime. This recipe will give your tastebuds a tasty vacation to the South.

Preheat oven to 450°

Line two baking sheets with oven-safe parchment paper

In a large bowl, whisk together flour, baking powder, sugar, salt, and baking soda. Transfer half of the dry ingredients to another bowl. Add butter and beat until the mixture resembles coarse crumbs, with some larger pieces still remaining. Return this mixture back to the bowl with the rest of the dry ingredients. Italian seasoning and stir to combine.

Make a well in the center and gradually add milk, stirring with a wooden spoon until large clumps form; do not allow a dough to form in the bowl. Turn mixture out onto a lightly floured work surface, and using lightly floured hands, knead two or three times just until a dough forms.

Pat dough into an 8-by-8-inch square. Use a 2-in. round cutter, and transfer to prepared baking sheet, spacing 2 inches apart. Brush tops with egg wash. Transfer to oven and bake until golden brown, about 12 minutes.

Brown the sausage in a large skillet over medium-high heat until no longer pink.

Add the butter to the pan and stir it around until melted.

Sprinkle the flour over the sausage and stir for 2 minutes.

Pour the milk into the sausage and flour mixture slowly, whisking constantly until smooth.

Whisk in the seasonings. Taste the gravy and adjust seasoning if necessary.

While I'm a huge fan of Italian-seasoning, I understand that it's not for everyone. To remedy this, I suggest using either only half a tablespoon or a single teaspoon.
