Instructions

Step 1
Preheat oven to 210’C
Step 2
Put everything into the roasting tin apart from the coconut milk, water, peas and lentils. Mix then roast for 5 mins.
Step 3
Add the coconut milk, water, peas and lentils. Stir well and cook for a further 25 mins. Until the potatoes are cooked through.
Step 4
Adjust with lime juice and salt.
Step 5
Serve sprinkled with coriander and rice or naan bread.
