Ingredients

1red onion
¾ cupapple cider vinegar
¼ cupwater
1 tspsalt
2 Tbspsugar
0.5 headpurple cabbage
shredded
2carrots
grated
2green onions
chopped
¼ cupcilantro
chopped
½ cupkewpie
or normal mayo
2 Tbspapple cider vinegar
2 Tbsphoney
salt
to taste
pepper
to taste
0.5 lbpeeled and deveined shrimp
2 Tbspchipotle seasoning
or cajun
1 Tbspolive oil
1lime
4tortillas

Instructions
Step 1
For pickled onions- thinly slice red onion and place in a glass container. Bring apple cider vinegar, water, salt. sugar in a small sauce pot and bring to a simmer on medium heat. Once simmered add pickling liquid to jar to pickle onions. Wait at least 30 minutes and make sure onions are fully submerged
Step 2
For slaw- combine shredded cabbage, carrots, chopped green onions, chopped cilantro in a large bowl.
Step 3
In a separate bowl combine mayo, ACV, honey, salt & pepper. Whisk well then combine with cabbage. Use tongs to fully mix slaw together.
Step 4
For shrimp- add shrimp to a bowl with 1 tsp olive oil, seasonings, and juice of 1/2 of a lime. Mix together. Put a saute pan on high heat and cook shrimp for about 2-3 minutes each side.
Step 5
For tortillas- use tongs and throw tortillas directly on flame to heat both sides.
Step 6
For assembly of tacos- lay tortillas down, add spicy mayo, shrimp, slaw, pickled red onions, and garnish with lime and cilantro.
