Instructions
Step 1
In a large pot, heat oil, add diced leeks and all of the spices.
Step 2
Saute until Leeks are translucent. Then add tomato paste and stir into leeks.
Step 3
Add marinara sauce, water and zucchini. Cook on medium heat for 30 minutes, covered.
Step 4
Then add "noodles" and cook until lasagna is soft. or spaghetti Squash
Step 5
Ladle soup into oven safe bowls and top with mozzarella cheese.
Step 6
Place in oven on broil until the cheese melts. Serve immediately. (Still need 1/2 lean)
