Instructions
Step 1
Begin with removing the basil leaves from the stem and grating the parmesan.
Step 2
Get a pan on a medium heat and add the pine nuts. Keep moving them around until golden brown. Be careful not to burn.
Step 3
In pestle and mortar (or food processor) add the pine nuts and garlic. Crush until smooth, add the basil leaves and beat down. Add the parmesan, combine well and slowly add the olive oil until you have a smooth paste.
Step 4
Season with salt to taste.
Step 5
Pre heat your oven to 200c/390f and add the bacon. Cook for 12- 15 minutes flipping once half way and remove when crispy.
Step 6
Chop the bacon into small bits.
Step 7
Get a pan onto boil and add a generous amount of salt. Cook the pasta until al dente (check package for cooking times) and remember to remove some pasta water and keep on the side.
Step 8
Drain the pasta and add to a pan on a low-medium heat. Add the pesto along with the pasta water and grated parmesan. Mix until well combined.
Step 9
Serve with the crispy bacon sprinkled on top and enjoy!
