Instructions
Step 1
Preheat oven to 180 degrees. Put butternut squash pieces in roasting tray, drizzle with olive oil and 1 tbs paprika and roast for 45 minutes or until soft.
Step 2
When the squash is nearly done, heat some olive oil in a pan and soften the onions (5-10 mins).
Step 3
Add garlic and carrots and soften for another 5-10 minutes.
Step 4
Add in roasted butternut squash pieces and then vegetable stock.
Step 5
Simmer for 20 mins
Step 6
Blitz with a handblender or soupmaker and serve.
