Step 1
In a large food safe bucket or bowl, combine the buttermilk, 12 spices/herbs, plus kosher salt. Add chicken and mix thoroughly before placing in fridge for at least 6 hours but up to 24. Mix at least twice during marinating time.
Step 2
Take chicken out 15 minutes before cooking. Whisk flour, corn starch, and 12 spices/herbs together (no kosher salt, just the regular). Bread chicken in flour and let sit to the side for 10 minutes while oil is heating to 350°.
Step 3
Fry chicken a few pieces at a time, do not overcrowd your pan. Fry chicken to at least 170° internal temp (14-18 minutes). Turn half way through to get an even golden color. Place chicken on a wire rack in oven at 200° to keep warm while you fry the rest.
