Step 1
In a bowl, add butter (room temperature) and sugar and mix with a hand mixer for a minute or until fluffy.
Step 2
Incorporate eggs and vanilla and mix for another minute. Swift flour and corn flour, add salt and knead for a couple of minutes or until you form a smooth dough.
Step 3
Divide your dough in two parts, flatten it into a disk, cover with cling film and rest in the fridge for 10 mins.
Step 4
Use a rolling pin to flatten your dough on a clean surface (3-4mm thick), cut your cookies with a cookie cutter, place them on a baking tray previously lined with parchment paper and bake for 12 mins (190C/375F).
Step 5
In the meantime, in a bowl mix icing sugar with water and cut the bottom of your marshmallows in a diagonal. Set aside.
Step 6
When the cookies are cooled down, add 1 tbsp of royal icing (icing sugar and water) and 1 marshmallows on each cookie, draw the face and arms of your snowman and use two smarties for the buttons.
Step 7
Ps. For a more consistent royal icing (but with raw eggs), whisk 2 egg whites with 300g icing sugar.
