Instructions
Step 1
Add all the ingredients to a sturdy thick bottom pot.
Step 2
Put a saucer with the top down right in the middle of the pot (it will do the "stirring" for you).
Step 3
Use a "heat difuser" or a metal pot trivet under the pot. The dulce the leche needs to cook very slowly.
Step 4
Bring the liquid to a mild boil and then turn the heat to minimum.
Step 5
Do not mix, stir or move the pot for the next 6-9 hours. Do not remove the foam before it's finished.
Step 6
You can turn off the heat if you won't be home/will be asleep for a few hours, then turn it back on (minimum) again as soon as you can/the next day.
Step 7
When it's ready, remove the foam from the top and save it to spread on toast/top ice cream etc.
Step 8
Move the dulce de leche into a clean jar and, once it's cooled, store it in the fridge.
Step 9
If it's too thick or sugary, you can add heavy cream to taste and mix to combine on medium heat.
