The batter is very dense, almost like cookie dough, and the loaves don't rise much. Very delicious though!

Preheat oven to 350°

In a large bowl, combine the flour, baking soda, salt, sugar and cinnamon. Add the oil, eggs and vanilla and mix well.

Fold in the apples by hand.

Divide the batter between two 8×4-inch greased loaf pans.
