Roasted onions & sweet potato flower!

Instructions

Step 1
Start by preheating your oven to 200 C.
Step 2
Cut the red onions into thin rounds. Brush olive oil and red wine vinegar on top of the onion rounds. Sprinkle some salt and pepper over them as well. Put the onion rounds in the oven for 30 minutes. The first 20 minutes on 200C, the last 10 minutes on 220C.
Step 3
Peel and cut the sweet potato into tiny cubes and cook until done. Take the sweet potatoes from the fire and mash them. Add the butter, milk, apple juice and sriracha and mix well until the butter is melted.
Step 4
Lastly, cut the celery stalk into tiny strips for the flower stem, as well as for some decorations on the flower petals.
Step 5
Assemble the flower by building a base with the sweet potato, adding a roasted onion ring as the flower bud, and shape the petals with more sweet potato. Use the celery as the stem, and decorate to your liking. Enjoy!
