Ingredients
4 servings
1 lbboneless skinless chicken breast
1 tablespoonavocado oil
0.5 Cupred wine
or chicken broth
1 cuptomato puree
½ cupmonterey jack cheese shredded
1 tablespoonpaprika
⅛ teaspoonground black pepper
½ teaspoonsea salt
½ teaspoonground coriander seed
½ teaspoonchili powder
½ teaspoongarlic powder
½ teaspoononion powder
¼ teaspooncayenne pepper
Instructions
Step 1
In a small bowl, mix together all of the seasonings
Step 2
Rub the chicken on all sides with the seasoning
Step 3
Heat oil in a large skillet (preferably a cast iron) over medium high heat
Step 4
Add your chicken and cook until golden brown, approximately 4-6 minutes on each side.
Step 5
Set chicken aside on a plate
Step 6
Pour in the wine or broth and simmer until reduced, scrapping the brown bits from the bottom of the pan with a wooden spatula
Step 7
Stir in the tomato puree and whisk to combine in the sauce. Reduce heat and bring sauce to a simmer. Return the chicken back to a pan.
Step 8
Spoon sauce all over the chicken. Sprinkle with cheese and continue to cook until cheese is melted.
