Preheat the oven to 90C

Add the egg whites and citric acid to the large bowl and start whisking using the stand mixer or hand mixer. When egg whites double in size start to add sugar (1tbsp at a time). Continue whisking until you add all sugar and the meringue becomes thick and glossy and forms a stiff pick.

For coloured meringue use food colour paste. If you want to make pink-blue-white meringue, then divide your meringue into three equal parts. For the first part add a dot of pink colour and stir to evenly combine. Add a dot of blue colour to the second part and also stir until combined.

Line a cling film on the table and place your three colours of merengue in a line.

Secure it and form a “sausage “

Cut the extras of cling film from one side and place it into a piping bag, fitted with a nozzle ( open star for me).

Line two baking trays with parchment and start piping your meringue.

Bake for 2 hours then switch off the oven and let the meringue cool completely inside the oven.
