Step 1
Heat the oil in a 4-5 quart pan over medium heat. 1. the onions and carrots and cook 5 minutes, stirring occasionally. 2. Add one cup water, vegetable juice, broth, tomatoes, thyme, oregano, and a few grindings of pepper. Bring the soup to a boil, reduce the heat, and simmer, covered, 30 minutes. 3. Prepare pasta according to package directions. Add the cooked pasta, beans, and spinach and cook 4 over medium-low heat for 10 minutes.
