Ingredients

4 ozcream cheese
softened
5cloves garlic
minced
1 teaspoonherbs de provence
1 tablespoonolive oil
1onion
medium, chopped
4 cupsmushrooms
sliced
1 ¼ teaspoonsdried thyme
¾ teaspoondried rosemary
½ teaspooncrushed red pepper
4 cupschicken stock
low-salt
8 ounceswhole-wheat pasta
shells
2 cupsbroccoli
cut into bite sized pieces
1 poundchicken
boneless, skinless, cubed
2 tablespoonsfresh chives
chopped
Instructions
Step 1
Mix in the Herbs de provence and 1 tablespoon garlic into the softened cream cheese. Set aside.
Step 2
In a large soup pot cook the onions in olive oil until translucent.
Step 3
Add the mushrooms and cook until they begin to soften.
Step 4
Add remaining 4 tablespoons of garlic and cook for a minute or two (don't let it burn).
Step 5
Add the thyme, rosemary, crushed red pepper. Deglaze it with 1/2 cup chicken stock.
Step 6
Add the broth, pasta, broccoli, and cubed chicken to the pan and bring it to a boil.
Step 7
Cook, covered, 10-12 minutes until pasta is al dente, stirring every two or three minutes. A little broth will be left.
Step 8
Remove the pot from the heat stir in the cream cheese with blended spices. Let it sit, covered for 5 minutes. Sprinkle with chives and serve.
