Instructions

Step 1
Heat oil in lg saucepan over med heat until shimmering. Add onion, pancetta, salt, and pepper and cook, stirring frequently, until onion is softened, 7-10 min.
Step 2
Add broth and water and bring to a boil over high heat. Stir in pasta and return to a boil. Reduce heat, cover, and simmer until pasta is al dente, 8-10 min.
Step 3
Stir in peas and remove from heat. Stir in parsley, Romano, and mint. Season to taste. Serve with extra olive oil and Romano.
