Ingredients

Mince
1 packquorn mince
1can chopped tomatoes
0.5can refried beans
0.5 packsalsa
from, nacho kit
Spice mix
garlic and paprika
sweetcorn
garlic puree
cayenne pepper
tomato paste
Coriander paste
black pepper
Nachos
Pico de gallo
Instructions
Step 1
Preheat oven to 180C. Pre bake nachos in oven proof dish for 3-4 minutes.
Step 2
Then add cheese on top, let the cheese melt in (as extra protection to prevent sogginess from mince)
Step 3
Add oil, garlic, mince and frozen sweetcorn to pot. Cook for a few minutes until thawed
Step 4
Stir in tomato paste and spice mix
Step 5
Add can chopped tomatoes, cook for few mins
Step 6
Stir in refried beans, drained kidney beans, salsa and a small amount of coriander paste
Assembly
Step 7
Spread chilli over nachos. Bake for 5 mins.
Step 8
Add more cheese, bake for two mins
