Instructions
Step 1
Cook Rice - Put in saucepan with 450ml water bring to simmer . Reduce heat to low and cook for 12 mins .
Step 2
Crush garlic , coarsely chop tomatoes and cucumbers. Dissolve stock cubes in 250ml boiling water.
Step 3
Heat 1 Tbsp oil in frypan over high heat.Slice chicken and brown over high heat for 2 mins. Remove from pan.
Step 4
Reduce heat in pan cook garlic and Rendang Paste stirring for 1-2 mins.
Step 5
Stir in the stock and coconut milk.Bring to a simmer .
Step 6
Add the chicken and peas to the curry sauce reduce heat to medium and simmer gently. Stir in 1 tbsp Vinegar . Season with salt and pepper
Step 7
Put tomato ,cucumber 1 tbsp vinegar salt and pepper in bowl to make salsa.
Step 8
Divide rice and curry among bowls . Scatter with shallots and serve with salsa .
