Bacon Cauli Mac and Cheese — Low Carb Love™
This is perfect for a thanksgiving side or a birthday dinner! The crunchy bacon mixed with the cheesy cauliflower tastes amazing! This recipe is very easy to make and you guys will absolutely love it!

1 headcauliflower
cut into florets
salt
for water
¾ cupalmond milk
¼ cupheavy whipping cream
3 ouncescream cheese
softened
1 teaspoonsdried parsley
1 teaspoongarlic powder
¼ teaspoonchili powder
salt

fresh ground, to taste
1 ½ cupsshredded Cheddar cheese
divided
1 cupshredded mozzarella cheese
6 slicesbacon
diced and cooked
½ cuppork rinds crumbs
½ cupgrated parmesan cheese
2 tablespoonbutter

Instructions
Step 1
Preheat the oven to 375˚F.
Step 2
In a large pot with water and a pinch of salt, bring to a boil.
Step 3
Add the cauliflower florets to boiling water and cook for 6 to 8 minutes
Step 4
Prepare your baked dish with butter.
Step 5
Pour milk and heavy cream in a pot,
Step 6
Add the cream cheese to the milk and whisk until the cream cheese is completely melted.
Step 7
Stir in dried parsley, garlic powder, chili powder, salt, and pepper. Add part of the shredded cheddar cheese and shredded mozzarella cheese; gently whisk until cheeses are melted.
Step 8
Add the cauliflower florets back and gently stir around until everything is covered in cheese sauce.
Step 9
Add the cauliflower mixture to your baking dish.
Step 10
Fold in half of the cooked bacon
Step 11
In a small bowl combine pork rinds, crumbs, butter, and Parmesan and spread over the top.
Step 12
Bake, uncovered, for 18 to 20 minutes.
Step 13
Once out of the oven too with remaining bacon.
