Turkey Sausage and Kale Stuffed Squash

Ingredients
4 servings
2acorn squash
or other winter squash, it even works with spaghetti squash
½ cupitalian breadcrumbs
3 Tbspolive oil
2 cupskale
chopped, spinach works too, but double the amount if so
2cloves garlic
minced
1 tspcrushed red pepper
optional
8 ozturkey sausage
you can use sweet Italian, sage, hot, whatever you like, it’s always good
Instructions
Step 1
1. Preheat oven to 375 degrees Fahrenheit
Step 2
2. Slice squashes in half lengthwise, scoop out seeds.
Step 3
3. Rub squash halves with 2 Tbsp olive oil, season with salt and pepper, then place cut side down on a baking sheet lined with foil. Bake for 20-30 minutes, or until just tender.
Step 4
4. In a medium pan, drizzle olive oil. Add the turkey sausage and sauté until almost browned.
Step 5
5. Add garlic, stir. Add crushed red pepper if you’re using it. Add kale and sauté until just wilted, remove the pan from heat and set aside.
Step 6
6. When the squash is done, remove from oven and scoop out most of the flesh from the skins. Leave enough that the squash holds its shape.
Step 7
7. Mix the scooped out squash and the breadcrumbs into your sausage and kale mixture. Season with salt and pepper if desired.
Step 8
8. Divide your filling evenly among the 4 squash shells, it will be a bit mounded on top. Bake for an additional 20 minutes or until the top browns a bit.
