Instructions
Step 1
Pre heat oven to 200c/180c fan. Cut the peppers, Mushrooms, onions and chicken into large chunks and put in a large casserole dish.

Slice the chorizo and put into the casserole. Drizzle with a little olive oil, add 1 tbsp paprika and stir well. Place into the oven with the lid on the casserole dish.

Step 3
Slice the courgettes and after 15 minutes remove the casserole dish from the oven and add them and stir. Return the dish to the oven with a the lid on.
Step 4
After another 10 minutes add the tomatoes and olives and stir. Return to the oven and cook for another 10-15 minutes.
Step 5
Serve with crusty bread.
