Cook pasta

In a large skillet, heat olive oil over medium heat. When oil is warm add minced garlic and cook for 1 minute. Add sliced shallots, salt and pepper and ½ cup broth. Allow shallots to cook until soft
Step 3
Add cream to the shallot mix as soon as its slightly bubbly, add cheese and stir to combine. Let mixture reduce until a thick sauce forms.
Step 4
Drain pasta. Return to pot. Add fresh spinach and pour sauce over the spinach. Stir gently, then cover the pot off heat. Keep covered 2 to 3 minutes.
