My daughter made scones at school and asked if we could make a vegan version so here they are! Fluffy, light and SO delicious l. Makes 8 scones

Instructions

Step 1
Sift 400g self raising flour into a bowl
Step 2
Make a well in the middle and add 190g lemonade, 200g coconut cream, 1 tsp apple cider vinegar
Step 3
Mix until it just comes together using a knife (to prevent over mixing and making the dough tough)
Step 4
Tip onto a well floured surface Sift some flour over the top of the sticky dough and GENTLY press down with your hands until it's approx 3cm thick (you want to handle the dough as minimally as possible)
Step 5
Use a cookie cutter to cut circles, reshaping the dough as you need and place close together on a lined baking tray. They're going to look a little rustic. Just go with it!
Step 6
Mix a little coconut cream with water and brush over the top
Step 7
Bake on 190deg for 20-25mins until golden
Step 8
I've served mine with raspberry chia jam (approx 1 cup frozen thawed raspberries mixed with 2 TBS chia seeds. Mash together and let sit for 5mins to thicken) and soy yoghurt!
