Instructions

For the dough

Step 1
Preheat the oven on 180 degrees celsius.
Step 2
Mix all the ingredients together, make sure the butter is cold enough.
Step 3
Kneed till you have a ball of dough.
Step 4
Put the dough in the fridge and in the meantime make the caramel filling.

For the caramel filling

Step 5
Melt the butter in a saucepan and add the brown sugar.
Step 6
Let it heat till it's forms little bubbles.
Step 7
Add the condensed milk, vanilla extract and salt.
Step 8
Heat till the caramel is thick enough. Make sure you do this on a medium heat so that the caramel doesn't burn.
Step 9
The caramel should be so thick that it is difficult to fall off the spoon.
Step 10
Spread it on a baking sheet so that it cools faster. This takes about 15 minutes.

Filling the cookies

Step 11
Roll small balls out of the dough and flatten them.
Step 12
Put a drop of caramel on each flat ball.
Step 13
Now roll it up again like a ball. Make sure the caramel is completely hidden in the dough.

Place the balls on baking paper on a baking tray. Bake the cookies for 12-15 minutes until golden brown. Remove them from the oven when they are still a little soft and let them cool completely.
Step 15
Melt the white chocolate in a sauce pan. And dip each cookie in the chocolate. Then put them in the fridge for 30 minutes. The chocolate should then be completely hard.

Drizzle the remaining caramel over the cookies and sprinkle some salt over it.
