Ingredients

2 teaspoonlime zest
3 tablespoonslime juice
3 tablespoonsorange juice
3 tablespoonsolive oil
1 tablespoonminced garlic
1 teaspoonbrown sugar
packed
2 teaspoonchili powder
2 teaspooncanned chipotle pepper
minced
3 tablespoonsfresh cilantro
1 teaspoonsalt
¾ teaspoonground black pepper
1.75 lbsboneless skinless chicken breasts
diced
1yellow onion
large
3bell peppers
2 teaspoonsground cumin
Instructions
Step 1
Cut the chicken breasts, onion, and bell peppers all into 1 inch pieces.
Step 2
If using wooden skewers, soak in water overnight
Step 3
Mix together lime juice, lime zest, orange juice, olive oil, garlic, brown sugar, chili powder, cumin, chipotle pepper, cilantro, salt and pepper.
Step 4
Place chicken in gallon size resealable bag, then pour marinade mixture over the chicken. Seal bag and place in the fridge for 1-6 hours.
Step 5
Preheat grill over medium high heat to 400 degrees
Step 6
Make skewers with the chicken, peppers, and onions.
Step 7
Grill for approximately 6 minutes per side.
