Instructions
Step 1
Whisk together the honey, soy sauce, ginger, chilli flakes (red pepper flakes), black pepper, and garlic in a small bowl.
Step 2
Place the chicken breasts, bone-side down, in a 5.7 litre/6 quart slow cooker, season with salt, and pour the honey sauce over top. Cover and cook on High for 1½ hours.
Step 3
Add the carrots, broccoli, and bell pepper to the slow cooker. Stir to combine with the chicken and honey sauce. Cover and cook on High for 1½ hours more.
Step 4
Just before the chicken has finished cooking, preheat the grill. Line a rimmed baking sheet with parchment paper.
Step 5
Using tongs, remove the chicken from the slow cooker and place it skin-side up on the prepared baking sheet. Grill the chicken until the skin is golden and crispy, 2 to 3 minutes.
Step 6
Serve the chicken warm, with the vegetables alongside and the honey sauce spooned over the top.
