Instructions

Step 1
Cook your desired pasta in salted boiling water according to the package instructions. Meanwhile, begin the following steps. When the pasta is cooked, drain it and set it aside.
Step 2
In a bowl, season your scampi with garlic powder, Old Bay, onion powder, black pepper, Italian seasoning, and a drizzle of olive oil. Toss everything together.
Step 3
Cook the scampi for about 3 minutes on each side or until they are cooked through. Remove the cooked scampi from the pan and put them back into the bowl.
Step 4
In the same pan, add butter and sauté minced onion and garlic for about 3 minutes. Then add the halved cherry tomatoes and sauté for a few minutes.
Step 5
Pour in the chicken broth and bring it to a simmer. Then add the heavy cream and simmer for about 3-5 minutes over low-medium heat.
Step 6
Add the freshly grated Parmesan cheese and stir until it's completely melted. Then add the Italian seasoning, paprika, cayenne, red pepper flakes, and salt & black pepper to taste.
Step 7
Add the fresh spinach and cooked scampi back to the pan. Continue to simmer over low-medium heat until the spinach wilts down.
Step 8
Adjust the seasoning to taste. Then add the cooked pasta (your favorite) to the sauce and incorporate well.
Step 9
It's ready! Serve the creamy scampi and spinach pasta dish as desired and say "Bon appétit"!
