Step 1
Set oven to 180
Step 2
Slice the ciabatta into 2cm x 2 cm cubes toss in olive oil salt and pepper in a roasting tray and bake for 15 minutes or so to make crisp and simulate being stale

Beat the eggs in one dish and put the breadcrumbs and herbs in another with some salt and pepper. coat the chicken pieces in egg, then the breadcrumb mixture and set onto a plate
Step 4
In a large, tall-sided pan put a few glugs of olive oil and 2 tbsp of butter. Fry the chicken in batches until golden-brown and crisp. Add more oil and butter as needed to maintain a very shallow fry.
Put the chicken to one side, maybe keep warm in the oven

Tear the basil, cube the mozarella and half/quarter the tomatoes. Combine with the bread and rocket
Step 6
Make the dressing by combining the extra virgin olive oil and crush or grate the garlic. Stir vigorously or put into a sealed container to shake to combine.
Step 7
Pour the dressing over the salad, toss together and add a few shavings of parmesan over the top, serve immediately so the croutons to get too soggy
