Instructions
Step 1
Heat up the wok, add the ghee.
Step 2
Cut the meat into bite sized pieces and cook until slightly browned ~10 minutes.
Step 3
Cut one Mango fruit to thin pieces. Cut the Leeks and press the garlic.
Step 4
Add the mango, leeks and garlic to the meat and cook it all together for 3 minutes.
Step 5
Use a blender and make a puree out of the second mango. Mix the fruit with 300 ml water to a smooth cream.
Step 6
Mix the mango puree with the vinegar, honey, ketchup, the cornstarch and some salt.
Step 7
Add the puree to the meat and veg and let cook for a few minutes.
Step 8
Add the Thai seasoning if you have some. It's not mandatory and will also be tasty without.
Step 9
Serve on Thai rice, use the cashews as a topping.
