Ingredients

2sweet potatoes
2 tspcinnamon
olive oil
salt
1 cupquinoa
cooked
3chicken breasts
Cooked and shredded
3 cupsspinach
or kale
2apples
chopped
craisins
walnuts
Maple Mustard Dressing
Instructions
Step 1
Preheat the oven to 350 F.
Step 2
Cube sweet potatoes and place on a sheet pan. Toss with olive oil, salt, and cinnamon.
Step 3
Roast sweet potatoes in oven until soft—about 15 minutes.
Step 4
Mix dressing ingredients together while waiting for the sweet potatoes.
Step 5
Start each plate with a light layer of kale or spinach.
Step 6
Cover with light layer of quinoa.
Step 7
Top with chopped apples, sweet potatoes, and chicken.
Step 8
Garnish with cranberries and walnuts.
Step 9
Drizzle dressing and serve!
