Instructions
Step 1
In a large pot over medium heat, add leek, olive oil, and salt. Saute for 2-3 minutes
Step 2
While the leek sweats, chop the broccoli into bite sized pieces. Save the stalk. Use a potato peeler. remove the rough outer skin of the stalk. Dice the inner stalk into small chunks.
Step 3
Add the broccoli to the pot.
Step 4
Add chicken broth.
Step 5
Bring to a boil, then reduce to a simmer.
Step 6
Cover and cook for 20-30 minutes, or until the stalks are tender.
Step 7
Remove from heat and allow to cool.
Step 8
Add to a blender and blend till smooth.
Step 9
If you like the soup a litter creamier, add 1 tablespoon of butter per serving to the blender.
