Instructions

Step 1
Peel potatoes
Step 2
Fill a bowl with milk and lots of salt and pepper
Step 3
Slice potatoes really thin so they are translucent Into the milk/cream bowl (50% milk/cream)
Step 4
Line a bread loaf tin with parchment paper and make sure it overhangs so can later pull out easily and overlap the top when in the oven. Brush generously with butter.
Step 5
Overlap thin sliced potatoes into a single layer, brush with butter, pepper and parmasan. Repeat Layering up until tin is full - takes time so put tv/tunes on!
Step 6
Once complete, fold in the top parchment, cover the top of the tin with foil or lid and bake at 190° for 1.5-2 hours, until stabbing with a knife comes out clean.
Step 7
Recover the parchment paper. Cover top with cling film and put something heavy on top to weigh down. Put in fridge overnight.
Step 8
Next day, separate from tin with a knife and pull out. Trim ends so neat.
Step 9
Get a cast iron frying pan and put in butter and oil and herbs (rosemary, thyme etc) and sear edge. Make sure heat isn’t too high
