Instructions

Step 1
Preheat panini press to 350°F, or “medium.”
Step 2
Cut the 2 sides off the raw potatoes the long way. Then cut 1⁄4 inch slices the long way. Trim the long round sides of the potato slices off.
Step 3
Bake bacon in oven at 325 degrees until crisp (please bake bacon ahead of demo). Reserve all bacon drippings. Cut potatoes into 1⁄4 inch slices long way. Fry potatoes in a pan using the bacon drippings. Garnish potato with chopped chives, sour cream and crispy bacon.
