Instructions

Step 1
Cut chicken feet nails and put them in a pot filled with water, add in a few slices of ginger, cooking wine, scallion and Szechuan peppercorn, bring water to boil for 15 minutes or so until they are completely cooked.
Step 2
Slice more ginger, fresh red chili, lemon, cilantro and onion for the marinate.
Step 3
Remove chicken feet from the heat and simply cool them off by putting them in iced water for a few minutes.
Step 4
Debone chicken feet and finally marinate chicken feet with sliced ginger, onion, red chili, white vinegar, chicken powder, salt, fermented chili and cilantro. Refrigerate for at least a few hours or 24 hours preferably and serve cold.
