Ingredients

1red onion
sliced
2cloves garlic
minced
2carrots
large, peeled and sliced
2sweet potatoes
large, peeled and diced
1can garbanzo beans
drained and rinsed
2 poundsboneless skinless chicken thighs
cut into 2 inch pieces
1 tspcumin
1 tspturmeric
½ tsproasted cinnamon
1 tspfresh ground black pepper
2 tspdried parsley
2 tspsalt
½ tspcayenne
1 tspdried cilantro
1 x 14.5 ozcan fire roasted tomatoes
Instructions
Step 1
place onion, garlic, carrots, sweet potatoes, garbanzo beans, and chicken thigh pieces into slow cooker
Step 2
mix spices in a bowl and then sprinkle over chicken and vegetables
Step 3
pour the tomatoes over everything
Step 4
stir to combine
Step 5
cover and cook on high for 4 hours, or on low for 8 hours
