Beef and White Bean Minestroni
Made from leftover pot roast. No firm ingredient amounts because it depends on how much pot roast you have left over, how many people you are serving, and personal preference. And, you know, it's soup!

Instructions
Step 1
Add beef and broth to a dutch oven and bring to a simmer.
Step 2
Add pasta to the pot and simmer, covered, till done.
Step 3
Add white beans, tomatoes, rice and seasonings. Simmer until you can't stand it anymore.
Step 4
Serve with crackers, bread sticks, or what have you.
