German Potato Salad

This German Potato Salad is very delicious and full of flavors. It is served warm or room temperature.
Note: the potatoes don’t have to be red, you can use yellow. The red gives the dish color.

Step 1
1. Place potatoes in steamer basket in pot with 1 1/2 cup over medium heat. Cover with lid for 20 mins. (Note: you can also boil the potatoes)

2. Cook bacon in skillet (or pan) over medium high heat until crispy, leave drippings in.

3. Add onions to skillet with drippings, cook for 5 mins or until caramelized. Add garlic and cook for 30 seconds longer
Step 4
4. Pour chicken broth, apple cider vinegar, Dijon mustard and sugar. Bring liquid to a simmer and let reduce about half a minute to two
Step 5
5. Add chopped potatoes, bacon, and olive oil, and toss (or stir in). Season with salt and pepper.
Step 6
6. Remove from heat, toss in parsley. Enjoy!
