I’ve been diabetic forever so pancakes have long been something to avoid but these have changed the breakfast game! So satisfying.

Step 1
Add the first 5 ingredients to your high powdered blender/mixer. Blend completely and add as much air as possible. Then add baking powder and almond flour and blend just long enough to thoroughly integrate.
Pour into a heated, buttered pan or griddle. Wait until they bubble. Turn when it appears no more bubbles are rising. Pull when browned on both sides. Serve quickly with toasted nuts, fruit and sugar free syrup. Freeze for storage. (I’ve yet to try to reheat these. I’ll let you know!)
