Step 1
Preheat oven to 350

Chop sausage into medallion and place on baking sheet

Peel and cube sweet potato

In a bowl, toss 1 tbsp olive oil, cinnamon, salt and pepper with sweet potato to coat. Then place on baking sheet

Cook sausage and sweet potato for 15-20 minutes until sweet potato is soft (depending on how large you cubed the sweet potato)

Mix honey, mustard and remaining olive oil together to create dressing

Assemble arugula, pumpkin seeds, goat cheese, sausage and sweet potatoes in a dish. Top with dressing and enjoy!
