Step 1
Preheat oven to 190C (fan)
Step 2
In a large bowl combine kefir, eggs, oil, sugar and salt. Whisk well.
Step 3
Add flour and baking soda and whisk until you get a smooth batter.
Step 4
Grease the ovenproof baking dish with a little bit of oil and pour half of the batter into it.
Step 5
Assemble halved cherry tomatoes, shredded mozzarella and basil leaves on top, then pour with the remaining butter to cover.
Step 6
Bake for 35 minutes at 190C(fan) or until golden
Step 7
Brush with melted butter.
Step 8
Let it cool and enjoy!
